Baigan Tawa Fry

Aubergine, brinjal Or " Baingan" is a vegetable which is not liked by many people. But believe me if prepared in this way, everyone will ask for more. Brinjal is rich in many nutrients and is high on Antioxidants. It has numerous health benefits. They are low in calories so they make an excellent choice when losing weight. They are good for the heart and being rich in Potassium can help control blood pressure.So why to avoid such a beneficial vegetable. 

Brinjals come in various shapes and sizes. In this recipe we are using the round variety. 

In India they are always cooked as a part of the main course. But elsewhere brinjals are used in dips, lasagna, soups, appetizers and stews. Here also we are also cooking Brinjals as a side dish to be eaten with dal chawal. When you want a simple yet delicious meal, cook brinjal roundel with dal chawal and you will love this combination. 

We Need

  • 2 Large Round Brinjals

  • 1 Tbsp Red Chilli powder

  • 1 Tbsp Dhania powder

  • 1 Tbsp Salt

  • 4 Tbsp Besan or Gram flour

  • 1 Tbsp Suji or Semolina

  • Oil for shallow frying. 


Here We Go

  1. Wash Brinjals thoroughly. Remove the stalk. Now Cut ¼" thick round slices of Brinjal. 

  2. Immerse them in Water for 10 minutes. 

  3. After 10 minutes take out brinjals from water and sprinkle salt, red chilli powder, Dhania powder on them. Rub the spices on both the sides of Brinjal slices with your fingers. 

  4. Mix Suji and gram flour in a plate. Add salt and red chilli powder to it. 

  5. Now coat both the sides of Brinjal slices with this mixture. Keep aside

  6. Meanwhile Heat  4 Tbsp oil in a flat bottomed pan Or tawa. When oil is heated put Brinjal slices in it. Put the flame to medium. When one side turns into a bright golden colour flip over and cook the other side of the slice till it turns into similar golden colour. . As Brinjals cook very fast  it will only take 5 to 6 minutes to cook both sides. 

  7. When cooked on both sides serve these Brinjal Slices along with Yellow dal Tadka and boiled rice to make a delicious meal.
