Zucchini Crepes


Today we are going to make Zucchini Crepes from leftovers in our kitchen. Food should not be wasted is my mantra. Sometimes it is difficult to eat the same thing again. I believe in changing the shape. This inspiration I got from my Mom. She always experimented with leftovers and churned out many dishes. I will bring those recipes one by one to you. Taking inspiration from her I made these Zucchini Crepes. I had some leftover rice in the fridge and one zucchini was also hiding in the vegetable basket . I grated the Zucchini and made paste of the rice in a grinder. Put in two eggs and some rice flour to give it a binding . It tasted great and healthy too. It has protein, carbs and lots of fibre. These are gluten free also . So try them once. You will love them. 

We need:

  • 2 Cups of Cooked Rice

  • 500 gm of Zucchini. 

  • 2 Eggs

  • 5 Tbsp Rice Flour. 

  • 1 Tsp Black Pepper Powder

  • 2 Tsp Pizza Seasoning

  • 1 Tsp Chilli Flakes

  • Salt to taste

  • Oil for Crepes. 


Here We go:

  1. Grind Cooked Rice with 2 Tbsp of water only. Use the water to smoothen the grinding process only. Too much water will spoil the formation of crepe. 

  2. Wash the Zucchini and grate it using a medium grater with its skin. Keep aside. 

  3. In a mixing bowl mix Zucchini, ground Rice, eggs and Rice flour. Also add all the seasoning. Make a thick paste of spreading consistency. 

  4. Heat a non stick pan. Coat the pan with 2 drops of olive oil. Take a ladleful of the batter and spread it in the pan. .


  5.  Cover it with a lid for 2 to 3 min or till the upper side of the crepe is no longer wet. Now flip the crepe and cook the other side also

  6. Take out in a plate and enjoy with sauce of your choice. 


Cooking Time 30 min. 

Makes 8 Crepes
