Healthy Beetroot Salad


Health is wealth. Very true. So today I am here with a health basket. A combination of various nutrients, salads give various health benefits. I have used beetroot, cucumber, tomatoes and potatoes in this recipe. To give it a crunch I added pumpkin and melon seeds. Beetroot as we all know are packed with nutrients and are a great source of fiber, folate (vitamin B9), manganese, potassium, iron, and vitamin C. Cucumber are low in calories and high on antioxidants. Whereas Potatoes contain significant amount  of fibre,vitamin B6 ,  potassium and vitamin C. Coming to Tomatoes, they are the highest source of Lycopin which has various health benefits. Seeds are a great sources of fiber and also contain healthy monounsaturated fats, polyunsaturated fats and many important vitamins, minerals and antioxidants.

With so many health benefits ' Salad khana to banta hai.' 


We Need

  • 1 big beetroot

  • 2 medium sized boiled potatoes

  • 1 big Cucumber

  • 2 medium sized tomatoes

  • 2 Tbsp Pumpkin Seeds 

  • 2 Tbsp Melon seeds


For Seasoning

  • 1 Tbsp Virgin Olive oil

  • 1 Tsp Pink Himalayan Salt

  • 1 Tsp Black Pepper Powder

  • 1 Tsp Garlic Powder

  • 1 Tbsp Veeba's Barbeque Sauce. This is not a paid promotion, I genuinely like their products. 

  • 1 Tbsp lemon juice. 


Here We go. 

  1. Pressure Cook  beetroot to one whistle. After cooling, Peel and cut it into cubes. 

  2. Cut cucumber, tomatoes, and boiled potatoes into cubes. 

  3. Take a salad bowl and add lemon juice, Olive oil, barbeque sauce, garlic powder , black pepper powder and pink Himalayan salt ( kala namak). Give it a good mix. 

  4. Add all the veggies to the seasoning and give it a toss. 

  5. Place the salad in a bowl and sprinkle both pumpkin and melon seeds on it. 

  6. Serve your salad and enjoy the health benefits


Tip for Crunchy Salad
Add seasoning at the time of serving. Otherwise the salad will turn soggy.
